what is gluten?
Simply put, gluten is the protein that is found in wheat, barley and rye. Essentially it is the "glue" that holds breads and other baked goods together. It is responsible for the great taste and texture that you love.
So why is it so bad for me? Many people are finding that their bodies cannot properly digest this protein and as a result they are burdened with various health issues. Health issues that if unnoticed or ignored may become serious. Those who suffer from gluten intolerance must carefully watch all food items. Not only is gluten in obvious foods (like bakery items), but it also sneaks into many common foods (such as soups, sauces, & alcohol).
